<p>I’m going to roast the eggplant as a side dish.  I’ll do it when I cook the pie pumpkin.  We ate the green beans for dinner tonight.  I’ll be using the bell peppers in fajitas tomorrow night.  Some of the basil will go into salad dressing and the rest I’m going to puree with olive oil and freeze.</p>
<p>The lettuce will make great salads.  We were almost out.  I picked tomatoes at the garden today and this one will get combined with those for the freezer.</p>
<p>Between the apples and pie pumpkin – I’m in heaven this week.</p>

				<content:encoded><![CDATA[<p>This marks week 11 of our Fresh Fork Market CSA.  It’s hard to believe that we are 1/2 way through the season.</p>
<p>Since I was in Utah earlier in the week, I opted to take a vacation week this week.  Occasionally, I take a vacation week when we are having busy week or if I feel behind on veggies even if I am actually in town on pick up day..  Then, I usually hold my breath and hope that Trevor doesn’t send out the “best bag of the season” list two days later since vacation requests are due on Saturday and the list usually comes out on Monday.</p>
<p>Here’s what folks received in their bags this week:</p>
<ul>
<li>3# bag red Norland potatoes</li>
<li>1/2 dozen sweet corn</li>
<li>1 bunch leeks (may be 1 leek depending on size)</li>
<li>1 bulb fennel</li>
<li>Approx. 1.5 lbs. heirloom tomatoes</li>
<li>2 oz basil</li>
<li>Approx. 2 lbs. slicing tomatoes</li>
<li>1 lb. grass-fed ground beef</li>
<li>Approx. 2 lbs. peaches</li>
<li>1-2 eggplant, depending on size</li>
<li>2 zucchini or squash</li>
<li>1-2 onions</li>
<li>2-3 &#8220;Italian frier&#8221; peppers (red sweet stuffing peppers)</li>
<li>1 melon &#8211; choice of cantaloupe or watermelon</li>
<li>1/2 lb. Swiss chard</li>
<li>1 bulb garlic</li>
<li>1 piece Havarti cheese</li>
</ul>
<p>I’ve been hearing from other people who do CSAs that they have too much food or are too busy to get it all used.  I can’t say that we are perfect in our house, but we are pretty good at blanching, chopping and freezing items to make sure we don’t waste food when we are particular busy or have an over abundance.</p>
<p>Almost all of the above items could be froze with little effort.  I love pulling items out of the freezer in the middle of winter and getting a taste of fresh local food.</p>
<p>I think every bag is outstanding, but this is a bag that has lots of items that we get on a fairly regular basis.  I am happy with my decision to be on vacation.  With a little luck, I’ll get a photo of a large share tomorrow and add a photo to my post.</p>

<p>These melons are really small.  I think I’ll call them personal size.  We’ll eat them quickly.</p>

<p>The guys of the house will snack on the cherry tomatoes.  The rest are going into some salsa (hopefully tonight).</p>

<p>I haven’t decided on a dish for the kale yet.  It may just get sautéed.  The cucumbers will be great for salads and snacking.</p>

<p>I’m not a huge fan of ratatouille, so we’ll probably make a veggie lasagna this week and use the eggplant.  I’m hoping to try a bread and butter zucchini pickle recipe with the zucchini (and a few others we have).</p>

<p>I really need to get some preserving done, my fridge is over flowing.  A little canning and freezing and we’ll be all set.  It’s easy for us to use our items when we eat at home, but we’ve had a strange schedule lately and we’re a bit behind on consumption.</p>

				<content:encoded><![CDATA[<p>Today, we had pick up number 6 for our <a href="http://www.geaugafamilyfarms.org/">Geauga Family Farms CSA</a>.  The Whole Food pick up has been different this year.  There’s not one person from Whole Foods manning the pick up.  It’s more of a self serve in the back room and stop at the desk to check off your name.  It’s fine in the back room, the kids and I miss seeing Andrew.</p>

<p>Stephen and Nick will probably eat all of the cherry tomatoes tomorrow.  I’m glad that’s one item that I never have to worry about.  We are also going to get some out of our garden this year.  We’re psyched about that.  The blueberries made me smile.  I picked 7 pounds of blueberries today, so this container doesn’t seem like much to me.  I froze most of what I picked already.  These will be used on cereal at breakfast or snacks tomorrow.  Nick is in camp this week and has to pack a snack and lunch.  I’ve been trying to give him as many good local items as possible.</p>
<p>I’m going to try squash chips with the squash this week.  I’ve read a few recipes on line and will create my own version of them.  I hope that I can get enough moisture out of them to make them crunchy.  The tomato and lettuce will go in salads.  The cucumber will be chopped up for snacks.</p>
<p>We have quite a bit of onion at the moment.  I’ll try to make fajitas this week.  We still have pepper strips frozen that need used up anyway.  I’m in the mood for homemade whole wheat tortillas so that will work out well.</p>
<p>We’ll have the cauliflower as a side dish one day this week.  We had the beans with dinner tonight.  They were absolutely delicious and there’s just enough left to put a few in Stephen’s lunch tomorrow.</p>
<p>The basil looks a bit tired, but I’m sure it will be tasty. I’m going to make a vinaigrette dressing with it.</p>
<p>I haven’t really tried many actual recipes lately.  I’m planning to carve out some more time for cooking in the next couple of weeks.  I feel like I’m still adjusting from being away on vacation.  I’m already looking forward to next week’s share.</p>

				<content:encoded><![CDATA[<p>Today, we went to the “little” Whole Foods and picked up our <a href="http://www.geaugafamilyfarms.org/">Geauga Family Farms CSA</a>.  The kids totally know our routine.  We usually need to buy something.  Today, we bought yogurt.  At the checkout, Nick and Sally each get a wooden nickel to donate to a charity since we bring a bag.  They love putting a nickel in the slot to pick their charity.  Then, they go straight to the CSA area which also is the children’s coloring area.  They are also very interested in whatever we get in our box.</p>

<p>I’m leaving for Hawaii on Monday, so this week is all about food preservation.  I’m cooking some meals for my family to enjoy while I am gone, but most of that work is done or planned.  In addition to my trip, my husband is out of town tomorrow through Friday.</p>
<p>I’m going to blanch and freeze the green beans.  I have others to freeze as well, so it’s worth the effort.</p>
<p>I plan to have some corn with the kids tomorrow and freeze the rest.  There’s only 6 ears so that should be simple.</p>
<p>Unless I get ambitious, I’m going to store the potatoes.  A few of the apples are already mixed in with the sauce that I was making tonight.  The rest will be going into apple-plum sauce tomorrow.  We picked plums yesterday, so I need to make something with them.</p>
<p>I’ll going to make fajitas and use some peppers and onions this week.  I&#8217;ll freeze the rest.</p>
<p>I’m going to make some basil/olive oil cubes for the freezer with the basil.  It will be handy for winter soup and tomato sauce dishes.</p>
<p>I already froze the tomatoes.  I just washed them, cored, and quartered them.  I’ll make a saucy dish with them in a couple of week.</p>
<p>The lettuce will get eaten in salads.  I’ll either blanch and freezer the eggplant or make mini eggplant pizzas.  It all depends on the rest of the items are going.</p>
<p>I’ll need to research the dill.  Usually, I use it in pickles, but I don’t have any cucumbers.</p>
<p>It’s going to be a busy week here.  I have a to do list that’s a mile long before my trip.</p>

<p>We didn’t do too badly last week, but we had company this weekend and I feel a little bit behind.  It’s really because of peach and tomato picking, not the CSA items.  I finally canned the tomatoes yesterday and I’m finishing the peaches now.</p>
<p>With this week’s CSA items, I see some coleslaw in our future since we got cabbage today and we are getting apples on Thursday.  I’ll make some pasta sauce with the tomatoes, basil, eggplant and squash and we’ll have that with pasta for a meal.  I’ll probably add that hot pepper too.</p>
<p>I’ll also be making some more pickles.  I think we ate all of the ones from the last batch, so that’s timely.</p>
<p>I think this week is easy, especially since we don’t have any meals out planned.</p>

				<content:encoded><![CDATA[<p>Last week, we took a vacation from our <a href="http://www.freshforkmarket.com/">Fresh Fork CSA</a>.  There is a generous vacation plan.  In a nutshell, you can miss up to 4 weeks as long as you give advance notice.  When you return, you can double up a week or place a la carte orders for the dollar value.</p>
<p>Here’s what we would have received last week:</p>
<p><strong>Small CSA:</strong></p>
<ul>
<li>1 lb mild Italian sausage, ground</li>
<li>8 oz grassfed Gouda cheese from Mayfield Road Creamery</li>
<li>1 bunch of leeks</li>
<li>1 pint cherry tomatoes</li>
<li>Approx a quart of hot hungarian peppers (6-8)</li>
<li>2 Patty Pan Squash</li>
<li>1.5 lbs slicing tomatoes</li>
<li>1 pint blueberries</li>
<li>1.5 lb peaches</li>
</ul>
<p>In my opinion, it wasn’t a bad week to miss.  We love the sausage and cheese, but can easily get that on a special order or buy it from the back of the truck.  This time of year, we get tons of tomatoes, and our freezer is well stocked with blueberries.  I picked up some local peaches at Whole Foods over the weekend.  I have a hard time using hot peppers.  I’ve successfully used leeks before, but I’m fine without them.  I really liked the Patty Pan squash a couple of weeks ago.  It made the best veggie lasagna.</p>
<p>Now for this week:</p>
<p><strong>Small CSA:</strong></p>

<li>1 4-oz. package goat chevre cheese from Lucky Penny Farm</li>
<li>1 watermelon or 1 pint of blackberries</li>
<li>6 ears corn</li>
<li>1 pint heirloom cherry tomatoes (multi-color)</li>
<li>2 ct. zucchini (dark green, light green, or golden&#8230;we have a good mix this week)</li>
<li>2 ct. yellow summer squash</li>
<li>Approx. 1.5 lbs red slicing tomatoes</li>
<li>Quarter-lb. basil</li>
<li>2 green bell peppers</li>
<li>1 large black opal eggplant</li>
<li>1 large candy onion</li>
</ul>

<p>We bought 3 watermelons on sale this past Sunday.  We also got a watermelon on Tuesday in our CSA pick up.  We’ve eaten almost 2 watermelons so far.  We may end up freezing some for a watermelon frosty or two.</p>

<p>I think I’m going to use the tomatoes (along with the ones from Tuesday) and make some sauce to use in some eggplant/squash lasagna.  I think we have everything we need except cottage cheese.</p>

<p>I love the color on the golden zucchini.  I’m not sure I’ve ever had this variety.  I’m excited to try it.</p>

<p>Usually, I end up freezing herbs like basil.  But, this week I wished I had some fresh more than once.  I currently have it in water on our kitchen table and I’m hoping it lasts for Peach Vinaigrette salad dressing and Lemon Basil Egg Salad.  I’m hoping to make both this week.</p>

<p>I’m thinking that a gluten free chili mac dish might be in order when my in laws visit this weekend.  I saw all of the tomatoes and immediately thought chili or sauce.  With the chili route, I could use the onion, peppers and tomatoes in one shot.  The basil will be dried or frozen for use in sauce in the upcoming weeks.  We were almost out of lettuce, so it’s nice to be stocked up for salads.  The cabbage will go into cole slaw along with the head I have from our other CSA.  The cauliflower will get eaten for lunch tomorrow.  I’m not sure about the other ingredients.  We will make an effort to use or preserve everything by Friday night as we have company for the weekend and we don’t want anything to go bad!</p>
